This month’s craft challenge was a surprising one for me – Bake It. To me, crafting and baking are totally separate entities! If you know me at all, you probably know I’m not much of a cook or a baker. You also probably know how much my kids like to snack! We were having a serious problem with the kids eating a bag of mini-muffins per day – with only 5 per box, they were emptying quite fast. Plus, when they cost $4 a box, that adds up! So Dave suggested I make my own muffins. I wasn’t sure how it would go for two reasons – my lack of baking skills and the kids’ enjoyment of homemade versus packaged muffins. Well, we gave it a try!
Chocolate Chip Muffins Recipe from allrecipes.com
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 cup white sugar
- 1/2 teaspoon salt
- 1 cup milk
- 1 egg
- 1/3 cup butter, melted
- 1 cup semisweet chocolate chips
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease or line 12 muffin cups.
- In a large mixing bowl, combine the flour, baking powder, sugar and salt. Stir in the milk, egg, butter and chocolate chips. Pour batter into prepared muffin cups.
- Bake in preheated oven for 15 to 20 minutes, until a toothpick inserted into the center of a muffin comes out clean.
I would say it was a successful test! We have made these muffins twice already – next time I probably should make more than one batch at a time! The kids love them and have not asked me for packaged muffins since.
